I have smoked a few things. Prime Rib is by far my all time favorite. I can only afford it when it's on sale. This was my fourth try on prime rib and my all time best. This was a small 3.5 pounder that I bought on sale and stuck in the freezer. I followed Bearclaw's recipe to the letter this time. No beef ever goes in my smoker without Chef JJ's au jus going in with it. I tweaked Chef JJ's au jus this time. I had been using Cabernet Sauvignon the first three tries. This time I used Shiraz wine and simmered until it was a thick broth. This was melt in my mouth:
