A buddy of mine got married to a sweet young nub. They didn't want a big fancy wedding and asked if they could have it at my house and make them a dinner. I was very honoured.

For appetizers I did shrimp pops with a spicy sauce and ABT's as they like a touch of spice.

I did a prime rib over some aromatics so I would get a good au jus to go with it.

I started with SPOG.

I put the aromatics in a roasting pan and the roast over it.

I smoked it at 350 F to an internal temperature of 130 F (it went to 135 while resting) and I also roasted some potatoes with it. I went with the higher temperature because some liked rare and not all did so I needed well cooked end pieces.

All was delicious and it was wonderful to be part of a friend's special day!
