...I think. Made the trek to a Publix today for something else and as always, I made a swoop through the meat dept. They had a case full of whole, semi-boneless smoked hams for 99¢/lb. Don't really know what I'm going to do with it, but just had to grab one...

Pulled ham sounds real good. You could also make some smoked ham salad with it.

Deviled ham to add to pulled option. Double smoked is another option.

I get an impulse buy on deals and then try to figure it out from there.
I got a lamb roast last week for a great price. I want to grind it. Wife wants me to try make souvlaki.

I’d double smoke and glaze it. My favorite is apricot soy glaze. Cook to slice and enjoy. Then vac seal the rest for quick meals or samiches.

I'd vote double-smoke with a maple & Sichuan peppercorn glaze. Serve as a main or break it down into bite size chunks. The chunks go well in rice or salad, but I'm guessing they will magically disappear on their own before you figure out what exactly you want to do with them.
