I will take that mash recipe. I have a cauliflower I need to use. I really going to try get that cheesecake made this weekend. @ days off is just not enough!

I'd be interested in the mash recipe as well. I love my mashed potatoes, but it's always good to have alternatives. I usually only roast my cauliflower.
 
Nicely done. I have played with Cauliflower Mashed and am amazed how much they taste like Mashed Taters, every time we make them...JJ

I love them too but often struggle with them being too runny. These are nice and thick. I’m going to post what I did below.
 
For anyone interested in the mash these are my favorite so far. I just winged this and did it by taste with the goal being thick and tasty :) General recipe for the cauliflower. 3 heads of cauliflower trimmed into florets. I split into 2 batches. Put in microwave safe container with half a cup of wAter for 30 minutes. I used this method instead of boiling to reduce moisture. Many come out too runny. Roasting is an option but usually turns brown which is not visually appealing. When done I mashed by hand and added 2 blocks of cream cheese, half a stick of salted butter, 2 tbsp on horseradish and salt and pepper to taste. Once I had a fairly good mix I finished it to perfectly smooth using an immersion blender. You can omit horseradish if you like and could certainly add garlic, parm etc for flavor. This isn’t fancy with a ton of ingredients to dazzle but the result is the best mash texture I’ve seen. They are the bomb 🙂 The nuke time on the cauliflower will vary by microwave. I checked every 10 minutes and kept adding time until tender. I also scooped the florets our with a slotted spoon to leave any liquid behind. These were 3 nice big heads.

Thanks all for the kind words!! I posted the mash recipe I jotted down after I finished cooking them to taste and texture. The filets were money and the pic on the cutting board one of my favorites. Actually got it featured in a FB Smoking group as well :)
