POST CHRISTMAS PRIME RIB (What to do with it?)

  1. Here is what was left of my Christmas Prime Rib, pretty darn good !!!

    The bones I removed immediately after I pulled it off the smoker, glazed right off the grill


    Two slices of PR on the grill for our supper tonight


    Look at the meat on these ribs !   (Probably have to save these for my Grandson

    and his girlfriend, they love ribs) But I may hide them !

    Smoke was a big success everything gone except one bag of ham.

    Nice meaty bones.

    The PR I got the butcher had already cut the bones off. No meat on them.

  4. Thanks, when I went to the store to get my PR, I asked the butcher to let me look through the whole racks, I picked the one I wanted and asked him to cut me 4 bones out of the center.

    Nice to be able to talk to a butcher and not just some kidstocking the shelves with cryo-pacs isn't it?

    Nice looking mean Gary.

    BTW I am starting to enjoy experimenting with left overs as much as cooking the original smoke. So many good ideas here to try.

    I've experimented with all kinds of ways to do Prime Rib leftovers, and a quick ride on a hot grill is the best !![​IMG]

    I also grilled prime rib for Xmas.  The butcher likes to cut the bones out, remove the fat/silverskin, and then he ties the roast back up with the bones.  I visited him (Scooby) to go over what I wanted which was 2, 4 bone ribs since I prefer 2 smaller ones over a single large 8 bone rib.  I kept the bones and used this for the Au Jus that I made a day ahead and then I cooked the ribs with the au jus pans underneath for extra drippings.

    Guests left with some of the leftover PR and they said it was the best meat they had ever had.  I had rubbed it with a paste made up of olive oil, thyme, garlic, paprika, sage, etc. and this was put on the PR after I gave it a light coating of yellow mustard. 

    For the rest of the leftovers, I made PR cheesesteaks and I also made some PR Hash the day after Xmas.  All very good

    I have tryed before but........ I love prime rib soup! Of course not just any soup, I love Harriagan's Prime Rib soup. Alas I have ruined to many steaks and left overs trying to achieve that same profile that they have. They use some british beef mixture, I forget like "Beefo" maybe? It has sour cream, its unbelivable good. I just have never been able to make it.

    The only way you'll get it, is if you make a friend at Harrigan's. Its rarely made and when it is, its gone in less than an hour. So when you get the call....... LOL

    If you ever get a chance, if you by chance have a Harriagains locally, who knows where the small Dallas based chains open, go in, make a friend and wait patiently.

    I have tried several of those faux lookalike recipe sites, wasted so good prime rib. If I ever master it, I'll open a resturant and sell only prime rib soup.

      What to do with it?  Thin cut slices laying on top of a nice salad would have my mouth watering.  Wait it's watering now!!!!

    Looks great,I'd keep the ribs! Try blackening left over prime rib sometime,if you haven't.

    Prime Rib soup?  That sounds excellent #Foamheart!  I see that Harrigans uses Bovril so the wife is out getting this along with the rest of the New Year's eve menu.  I am making this tonight and will report back but how can sour cream, PR, and mushroom soup be bad?  Add bread and it is 5 stars... thank you.

    Tasty looking leftovers! I'm still waiting for my Prime rib to be done dry aging! Now about that prime rib soup, that's going to require some research!
     
  19. Hey Disco, if you want to buy a prime rib, do like we do, just skip buying groceries for a couple of weeks, or take a loan out at the bank, Prime Rib on the easy pay plan.
