Finally got the chance to do 4 tenderloins on the new Rec Tec. All in all, I am extremely happy with the purchase! I'm so new to this that everything at this point is an experiment, but so far I have grilled the best steak I have ever cooked (one of the top 3 that I have ever eaten), baked a pizza, smoked some andouille sausage, grilled juicy burgers and smoked some crazy good tenderloins.
For these 4 tenderloins, I injected all with some strained cajun seasoning and then topped as follows, with the strained herbs rubbed on top and more of the strained liquids brushed on about 10 minutes before they were done. I cooked them at 220 for about 2.5 - 3 hours using the extreme smoke feature.
1. Wrapped in bacon
2. Rub from a local BBQ restaurant
3. Cajun Seasoning
4. Lemon Pepper and Garlic
All cooked to 145 IT.
Incredible is all that I can say!!!!
Another month or so (and a little more confidence in the grill and thermometers) and I will get brave with longer cooks.
