Looks good to me. Not sure what they really are, but they look like the flap meat from the bone side of spare ribs. That's the thing with cuts with "made up" names. they can be whatever you want to make them from. Who cares what they call them, still good eatin if done right and those look exemplary !!

They arent flap meat. They are kinda thick. Doesnt look like it from the pics. Some are very lean some are fatty.
 
Who sincerely cares after they've been expertly grilled, glazed and plated for your enjoyment?
Not me, pass me a plate Adam, they look great.

They are pig, yep, yep, yep.... definitely pig. My vote is pig, good for consumption numerous ways, delicious slow smoked!
