Good evening all. I plan on smoking some pork ribs this weekend. As I have never smoked ribs before what are some of the best methods for smoking ribs? Weight to time ratio? I have apple and cherry wood chips for smoke flavor. Whicht goes best with pork? Who has a good dry rub or dry rub recipe? I have a charcoal smoker.
 
If you're doing spares 3-2-1 (3 hours unfoiled, 2 hours in foil, 1 hour unfoiled) works pretty well. 

I like a variation: 3 - 1.5 - 1-ish.  When I foil I add brown sugar, parkay, agsve nectar, and tiger sauce on both sides then double wrap.  When I unwrap I like to spritz with apple juice every 20 minutes.

I like apple wood with pork.

This is a pretty good rub - there are a million others:

2 cups packed light brown sugar
1 cup kosher salt
3/4 cup granulated sugar
1/2 cup garlic seasoning
1/4 tablespoon chili powder
1/4 cup lemon pepper
1/4 cup onion salt
1/4 teaspoon celery salt
2 tablespoons coarse ground black pepper
2 tablespoons whole celery seeds
1 teaspoon crushed cloves
1 tablespoon cayenne
1/2 teaspoon Mrs. Dash original blend
1/4 cup salt
