I have always smoked ribs low & slow. Want to smoke st.louis spares at 275,anyone done this? I don't foil. Will they still be tender. Also is that temp at the grate?
 
275 at the grate will work fine, I don’t fool either. I cook my ribs to temp not time, they will be tender
 
Yep, done it (grate temp). I don't spritz or wrap. The only difference is they'll be done between 4-5 hours for an average rack. I rarely do St. Louis cut, preferring untrimmed spares, so I'm usually closer to 5 hours at 275F.
 
STL's for me take between 3 1/2 to 4 hours on my pellet grill at 275 unwrapped. That's the only way I do them.
 
New here but not new to smoking (BGE's). Glad to join the community! I have done ribs at 325 to 350, "turbo" the only difference I noticed was the time it took to complete the cook.
