I think I'm safe here, but wanted a second opinion. I put an 8lb pork butt on the big green egg at midnight last night. Grate temp settled in at 280. I went to bed at 1am with the grate temp around 250, I figured it was still adjusting back to 280 with the cold pork dropping the temp a bit. I woke up around 4am and the grate temp was at 170. I honestly don't recall the meat temperature. I took a peak at the fire was still lit. I made a few slight adjustments and went back to bed. I woke up at 630 and the grate temp was back around 280. Please ease my doubt and tell me the meat is safe.
