After reading on this site about doing hot and fast pork butt I decided to give it a shot. This was the first butt on the new MasterBuilt 1050 Gravity smoker. I really liked the hot and fast method and the time I saved. I am not sure how big it was forgot to check the package but the whole cook was done in 8 hours and the results were fantastic. My next thing I want to try is the super hot and fast brisket method. The last pic is my 2 year old daughter approving of her pulled pork slider.

Looks awesome! I love watching my little ones enjoying good bbq! I did a hot and fast yesterday also and it turned out great. Took about the same time. Not bad for not wraping!
 
Nice color, and I noticed you sort of let the pork break down where it wanted to, instead of attacking it and forcing the shredding. I still prefer butts cooked at traditional barbecue temps, but when I was experimenting with HNF butts I trimmed the fat a little closer because it didn't render as well as LNS.

When you experiment with HNF brisket, your window of perfect doneness/tenderness is pretty short, and up until you pull it off the pit you can do everything perfectly.... but if you don't hold it a few hours it won't be as good as it could be. HNF cooking saves you time on the front end of the cook, but the holding time is important. I cook my competition flats in 6 to 7 hours, but hold for 2.5 to 3.5 hours.

My idea of "Hot & Fast" is 275°, but that's the MAX on my MES 40.
I used to have a Little one, but now he's 6' 4", and 48 years old.
