playoffs and meatloaf

I couldn't find any good sales this week but really wanted to smoke something for playoff Sunday. I decided to do a meatloaf. Here we go. 3 lbs of ground beef, about 7 small sweet peppers, 1 large sweet onion,( sauteed peppers and onions with a little butter and cooking wine) 1 tbsp of minced garlic, 2 eggs and four slices of bread crumbs. Separate into 2 bowls for easier mixing about 1/2 of ingredients in each. I added some cumin and chili powder while mixing. Once mixed thoroughly, molded into loaf and used my dry rub before wrapping with bacon weave, then a little more of my rub. Cranked my smoker up to high to get the smoke rolling probably 275*
 
That's a 'Hail Marry' of a meatloaf. Do keep the pics coming. All rain here, did some smoked cheese yesterday to get in the 'smoke' mode.
