Hi, I like your forum very much! I am in SC and like to hunt, make my own sausage, jerky and pork ham.

I have a "Masterbuilt" gas smoker, a grinder, a hand mixer (20#) and a sausage stuffier as well as a jerky gun.

I just went over the "Canadian bacon" step by step description of "Bear" and would like to make the same stuff.

I have one question what is " CBP, Garlic Powder, and Onion Powder" ?

I just happen to have a question. I just ordered a AMNPS for my MB gas smoker.

Can I mix pellets with saw dust? Or start with 1/2 row pellets (hickory) and continue the rest with saw dust (apple)?
