Just thought I'd share some stuff. Been a busy weekend so far.

Cleaned off the jalapeno plants yesterday before mowing. Been a good year. Got a few bags in the fridge also. What to do? I'm too lazy to can them anymore so I just make large jars of cowboy candy and keep that in the fridge.

And for good measure, I just knocked out a 7.5lb batch of RIP @SmokinEdge Cumberland style sausage. Gonna divide and pack that later or tomorrow. If you haven't tried it, it's quite tasty.

Nice . I've always wanted to try the Cowboy candy . I just cold pickled my Japs last week .
My plants have been doing great this year . Habs are going crazy , even in the brutal heat .

That sausage makes my mouth water everytime I see the picture .

Chris, both the Onion sausage and Eric's ( RIP ) look great.

Now that you mentioned the jalapeno's, I was going to make more Jalapeno and mint jelly. But maybe I will pick mine and do the candy. Got me thinking, thanks alot , lol

Some amazing looking sausage there! I want to dry some japs this year, and grind them up for bacon seasoning…

That sausage is killer. Ya know, I think you're the one that triggered me a few years back to make jam. That's a great idea!

Do you have a recipe for that cowboy candy?
I do. I believe I use the one from meatheads site.
1.5 lb jalapenos sliced I keep the seeds (or mix and match peppers. I've done this with all kinds)
2 Cups white sugar
2/3 cup vinegar I use white, but have also used ACV.
1/2 cup water
1 tsp kosher salt

Mix the liquids and sugar / salt in a pan large enough to fit the whole mess and bring to medium heat to dissolve the sugar. Once you get there turn up the heat and bring it to a boil, toss in the peppers for a few minutes till they boil again. Put the peppers in a jar then pour over the liquid to cover. Cool and toss in the fridge. I usually let them sit a week before digging in, but in a pinch I will go a day or two.
