Had plans to smoke up a prime rib for Christmas but all of our different schedules forced me to weight until today.  Oh well, what better way to begin the new year?  I believe this is about a 5lb bone-in, we are planning to make an au jus, mashed taters, and asparagus to go with it.



Kept it simple: EVOO and SPOG:


Currently on the WSM running 240 with Pecan chunks.  More to come!

That looks fantastic. A great piece of meat with some smashed taters and gravy--hard to beat. Add some asparagus and you got a real meal.
