This was my first attempt at corning my own brisket and I was very happy with it maybe just a tad to much pepper but overall very happy with it. I used the americas test kitchen recipe for brining and amazingribs recipe for the rub.

Looks great!

I've noticed with the few that I've done the pepper seems very upfront when I try it by itself (and I like a strong pepper flavor). But when I put it on Rye with some cheese and thousand island it's perfect.
 
Looks excellent. Is there such a thing as too much pepper?
