Can you use the weld pan as a water pan, or is it just for grease and heat dispersion?

That was my understanding all this time.....the pan was for water as well. That's the main reason for having a valve at the bottom of the drain line.

I can hold water in the pan with my Lang. The valve also allows the grease that doesn't sizzle to run out
