When we have a lot of company coming over, we like serving the occasional hickory smoked bone in ham. We especially like to heat our hickory smoked, bone in ham in our smoker to create double-smoked ham. We just smoke it at 225F to an IT of 140F and pull it. So yummy!

Of course, there are leftovers. And one of our fave things to make is double-smoked ham salad. So good!
Two pics follow ... all ingredients ... and ... plated. Recipe is below if interested.

Ingredients
1 lbs ground double-smoked ham
2 hard boiled eggs, finely chopped
2 tablespoons - finely chopped celery
4 teaspoons - sweet pickle relish
1 tablespoon - finely chopped onion
¾ cup (+/-) mayonnaise (to suit - I start with 1/2 cup and go up from there)
1.5 tablespoons yellow mustard

Directions
Mix all and refrigerate until serving time.

Easy peasy and good!

Wished my wife liked ham then we would have goodies like that in the house.
