My husband just gave me a MES 30" as an early Christmas gift. I love to cook and have been bugging him for a smoker. I think I tipped the scale when I mentioned making pastrami. After a trip to Sam's and the grocery I now have a brisket I plan to brine for pastrami, a ham to double smoke and a NY strip loin. I did order an Amazen smoker and pellets. Hoping it'll be here Monday as it shipped Wed. 

Good thing it's the holidays and there will be more hungry people around!

Other than my new fascination with my smoker, I've tackled all kinds of cuisine and also bake bread. I even cook for our 4 dogs. 

I hope to learn a lot here. There's nothing like talking to someone with experience!

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

We are all smoke junkies here and we have to get our fix. If you have questions

because their are so many different ways to make great Q...
