Different people sometimes seem to struggle with different things at times. My nemesis has always been pizza. Try as I may, I just haven't been able to master that perfect pie....until recently. There was always some aspect to them that just didn't come out right. Seemed like every time I decided to try again I was defeated from the beginning. I've added a couple things to the pizza making arsenal that seem to have helped me overcome this problem and am now turning out some really good pizza. The most recent addition was a 14" semi-deep-dish pizza pan and that is what seems to have helped me turn the corner. I've done a couple pizzas in it and a grilled spaghetti meal that was stellar. Everything thus far has been extremely good and I'd say it was probably the best $22 cooking toy I've ever bought. So last week I was geared up to make a really nice prime rib dinner when I got notice from the management that our vegetarian friend was coming to visit. Oh well, there goes the idea of prime rib. She loves pizza so thought I'd give it a go and see what happened. This is what I dubbed a pizza with split personalities
Dough laid out, sauce applied, and homemade spicy Italian sausage on half of it
Pepperoncini peppers on the other half (should have put them over the whole thing) and some red onions and red bell pepper
Spanish and kalamata olives
Sliced heirloom tomatoes of some sort that Tracy picked up and roasted garlic
Just a small amount of mozzarella cheese
Grilled to perfection...at least for my tastes
One veggie, one meat, and one of each for Tracy
At the time of making this it was the best pizza I'd ever made. The CI pan made for a perfectly even cook on the crust and the roasted garlic was insanely good!! This was made with Pillsbury dough and was the last time I will ever use store bought dough. I got some amazing input on dough recipes from our good friends Ray ( @sawhorseray ) and John ( @Smokin' in AZ ) who provided a super simple but amazingly good recipe. It made for a far better dough than I've had even at some truly famous pizza joints. Being that it only takes a few minutes to put together, Pillsbury has lost my business. No pics of the dough in progress unfortunately but here's the pizza build.
All the goodies. Sausage & bacon cooked up, pepperoncini peppers, sun dried tomatoes, fresh Italian parsley, red bell pepper, and chopped red onion
Homemade marinara and parmigiano reggiano cheese to start
The sausage and bacon
All the rest of the goodies
Fresh whole milk mozz and the fresh Italian parsley
Onto the grill. Progress pic about 15 minutes in
I'm happy up to this point...really happy.
The first serving of dinner is ready to inhale
The dough was so superior to anything I've ever had with a pizza. Can't believe it's taken me so long to get on board with making it. Take into account that the marinara, the sausage, bacon, and dough were all homemade, I believe this is a big part of what set the pizza so far over the top. I've never had a pizza that I enjoyed as much as this one. More importantly, Tracy said the same thing. Looks like pizza has gone from a couple times a year to a regular inclusion in our dinner rotation. Thanks for dropping in. Got a couple more things I did over the weekend I might just have to toss out there at some point.
