Fired up the Scottsdale with some Lump Charcoal & Almond wood. Cut a fat rib eye, nice and thick, seasoned it up and some little lamb chops....... and got to grilling.

Seasoned with course salt, pepper, garlic and finished with a litte tab of homemade herb compound butter.

Added some rice and asparagus for some sides.

Only my second time doing lamb.

Looks nice! I am going to cook lamb chops for New Year eve diner but unfortunately won't be able to do "open fire"... Instead I will be doing quick sear on CI scorching pan and quick finish in the oven.... topping with chimichurri souse....
 
Those look cooked to perfection. It's been too long since I've done lamb chops.
