Hello from the Pacific NW, where since yesterday the scent of hickory lingers in my clothes, hair, and kitchen, LOL. I got brave and did my first smoke (WSM 22" that I got at the end of last summer on OfferUp), my confidence boosted by knowing that I could turn to the forum for help. My biggest challenge--as I guess it is for many--was temperature regulation. But with the final hint to open it up fully at the bottom and let 'er rip, i finally maintained temp in the smoking range for the final hour of cooking.

And Oh. My. Goodness. This was a 4.11 lb roast I'd had in the freezer since Christmas--it had been marked down to $13 from $22! It is delish.

Thank you all for your expertise. I just might have a new obsession.
