Here is an Old Bay Recipe knock off , which I use. You may want to increase the celery seed a tad, other than that it's all good. Try it on your chicken, or try it as a new and different rub. It's all good there too! Any way here it is.
Delmarva Seasoning (Old Bay Substitute) Recipe #170734
As all you crab afficionados know, the term "Delmarva" refers to the coastal areas bordering on the states of Delaware (Del), Maryland (mar)and Virginia (va) where the world's best crabmeat is harvested. Thing is that a lot of people go to a lot of trouble (and a lot of expense) to buy the best lump crabmeat available -- but then they use a mass-produced commercial product to season it. Weird! This recipe for 'homemade' seasoning is courtesy of Epicurious. All you Old Bay die-hards, I defy you to try it and tell me you can't taste a difference!! :)

SERVES 10

 1. Combine all ingredients, stirring well to mix.
 2. Stored in a tightly-sealed container in a cool, dark place, seasonings will keep indefinitely.
 3. (Note: To give you a hint of how far this will go -- My favorite crab cake recipe is #81656 by pgserver6. To serve 10 people, this calls for 2 teaspoons of seasoning.).

Thanks, Dennis -- that's a good one for the WIKI!

Thanks for the recipe there Dennis. I use Old Bay alot around this here part of the woods. I used it on almost all my seafood and I add brown sugar to it for a good pork rub too.

We fish down at Taylors Island. Going down on 23 to 28th of July for hopefully bigger Croakers. Was down twice this year 1st time we went over to Calvert Cliffs Nuke plant for the Stripers on Memorial day. Got a nice one there. 2nd time my wife and I went to Taylors Island Family camp ground on the 11th to the 15th of June. We caught over 150 smaller croaker (9 -10 inch) and threw them back. Kept only 10 plus". Caught all them in 3 hours. The bay is full of them. And there good eatin too!!!

Here is a picture of one of the Stripers we caught. That nuke power makes um big ha ha.

I wanted to let everybody know that I made a batch of this up. I used only 1/4 the amount of salt that the recipe called for. This stuff turned out amazingly well.I got my spices at Columbia Spice. This seasoning is very potient, as it is fresh ground, so use smaller amounts.

I will be using this for my dried smoked croaker this year. I make this fish like jerky and eat it as a treat all year round.
