Do you put water in the pan? I switched from a miniWSM to Bronco and I'm trying to figure out why the results aren't quite what I want. You're bark looks great which has been a new issue for me. I like the Bronco but I feel like I got better results from my mini. Gonna do a side by side cook soon to compare. I'm thinking more moisture in the mini.
 
No i did not put any water in the foil pan.
