I'm brand new to the smoking game! I have absolutely no idea what I'm doing, but I'm looking forward to getting started on my Masterbuilt electric.

Welcome! +1 on the Ecourse and grab Jeff's book and his rub/sauce recipes.

Please RESIST the temptation to hosting a big party serving your first cue. You might luck out but you may fail miserably.

MES is doable but I suggest a good thermometer and I recommend a remote probe type. I also would suggest an AMNPS unless you really enjoy feeding chips every 30-45m.

Can you help me find which AMNPS I should buy? I bought the following:

Sounds like you are already familiar with AMNPS. It was designed for a GEN1 smoker with room to sit near bottom. Looks like your smoker has a water pan there and a little different than I've seen. BTW Pretty much no one uses water in there smoker... I call mine a drip tray. This one looks alot like yours: https://www.smokingmeatforums.com/threads/new-here-just-got-a-mes30-amnps-questions.192955/

Yes, that's the one I looked at. From the link I posted I think you can fit it in the pan area but measure to be sure. You could put a tube down there but you would have to refill for long smokes. Worst case and tray doesn't fit you can do like me and put it on the 4th rack and put my water pan/drip tray on the 3rd. Some foil or tin ware would work to shield it from drips. At first it freaked me out losing all that space but in reality I never load it anywhere near full enough that it is an issue. Remember to clean and season it well before using too. I used my AMNPS a few times to season so I could learn what to expect. Nice looking smoker!
