Hey All, I'm not overly concerned but when prepping my store bought corned beef to make pastrami, I noticed this ugly brown coloring on one of the brisket points. Since it's very thin ribs of meat where the off color is I'm guessing it is just oxidation but your thoughts? Didn't smell bad.

 
It could be from nitrates.

You see that a lot on briskets.
I usually just cut it off, but I'm sure it's OK to eat.
