I couldn't agree more. I've never been able to come close to slicing lox that thin.

Thanks Chris, they weren’t all that thin, but a good sharp slicing knife helps a bunch. Also, this batch was so good, what little I had I ate completely plain.

What brand and description is that knife? I'm feeling the urge to dress a surface grinder wheel to that profile and desecrate one of my wife's Henkels if I cant have one like yours. I can't make things anywhere near that pretty with my old finnish 9" Rapala.

I saw it today at restaurant depot. I should’ve taken a pic. I’ll go look at the knife now.
