42A62AC2-5607-4160-83EC-712B8E13C4D6.jpeg So this weekend I decided to give the smokers a rest.. I found this nice piece of salmon at Aldi’s and decided to do some Gravlox.. simple but delicious
Let’s go....
 
1-cup salt
1-cup sugar
1tbs Ground Star Anise
The zest of one lemon
And a bunch of dill

Put down on a non reactive dish 1/4 cup of the SnS .Rinse fish and dry and place
Skin side down . Cover with 1/2 remaining SnS and 1 TVs Ground Star
Anise
 
Now add the rest of the SnS and cover with plastic wrap and put a plate on top.
Add weight to the plate and place in fridge for two days
 
So the SnS are going to cure the fish and draw out the moisture. The dil and Star Anise are going to impart a light aromatic flavor.. will be back to ya on Tuesday when we slice and eat it!!! Get your bagels ready!!!
