Nothing to do with smoke

    1-cup salt
    1-cup sugar
    1tbs Ground Star Anise
    The zest of one lemon
    And a bunch of dill

    Skin side down . Cover with 1/2 remaining SnS and 1 TVs Ground Star

    I use a very similar recipe but with the addition of a sprinkle of vodka over the top of the dill. Gravlax is always a crowd pleaser.

    Now add the rest of the SnS and cover with plastic wrap and put a plate on top.
    Add weight to the plate and place in fridge for two days

    So the SnS are going to cure the fish and draw out the moisture. The dil and Star Anise are going to impart a light aromatic flavor.. will be back to ya on Tuesday when we slice and eat it!!! Get your bagels ready!!!
