NFDM replacement

Hi All I need too replace NFDM in my sausage recipes..What would be good to use I have tried Soy concentrate before and was NOT too happy with it..I was using NFDM to retain moisture in my sausages.

Dont use any.

You didnt like soy, why not try carrot binder.
 
You can use phosphates (amesphos). There's also soy isolate which may not be any good if you didn't like the soy concentrate, and there's carrot binder. I haven't tried any of these but I've been researching for similar reasons.

Out of curiosity, what didn't you like about soy concentrate? I just ordered a tub of that and was going to try it out before I moved on to the other options...
 
Ok here something I know nothing about, but, correct me if I'm wrong. It would not be wise to use in dry curing, however, would be good in lets say, summer sausage, hotdogs, brats?

The soy concentrate didn't really keep the moisture in my sausage.Maybe work better for you ..Let me know. The Soy concentrate that I use was not a powder, more like granules.
