Hi everyone

I live in South Africa. The Western Cape Province (where Table Mountain is). In a small town in the arrid Karoo district. We have plenty of ostrich and lots of wild life to choose from for smoking purposes. And cheap! (Relatively ...). I use an electrical butchery type smoker. It can dry and smoke and the drier has a temperature guage attached to it. So I use the drier to smoke ... Works excellently. I'm trying to smoke sausages (homemade), poultry and pork. I use chips we obtain from wine vat renovators. When the wine spoils the upper layer of the innards of the vat, it is removed and the wine impregnated chips can be bought for the equivalent of $2-3 a bag of 40 Kg. Yes ... it works very well!
