Hi Everybody,
I'm new to the site. Been smoking for about 6 months with some success. I do need some advise. I am using a cheap smoker, the charbroil cb600x. My wife would not let me spend the money on a better smoker until I had use a cheap one for at least a year. I don't fault her for that but now I'm somewhat frustrated with the smoker. Up till now I have not been able to consistently get the smoker to hold at 225*. It would usually be at 200 with the setting on high for the propane. I then ordered and installed a nomex door gasket. Now I can't get the smoker below 300* on the low setting. Could I use something like JBWeld to close up some of the burner holes ( maybe a quarter of them) to give off less heat? Or do I remove some of the gasket?
I know the easiest answer would answer would be to get a high quality smoker! Won't be able to talk the wife into that for a while. I'll just keep enjoying the website and trying the different recipes.
