Newbie wanting a easy recipe for beef/ pepperoni sticks

Hello Fire!

Nepas had a spicy pepperoni recipe a short while back:

Easy enough to adapt it to a stick recipe (i.e. 18 to 22mm casings; smoke, bloom & let 'em dry for a while in the fridge).

I can vouch for the Spicy pepperoni by Nespas. I made some this weekend. Mike didn't have a traditional pepperoni flavor, it was subtle, but I still like it a lot.

I am going to do 10lbs of it as beef sticks.

I added corriander and paprika to mine.

I made Nepas spicy pepperoni and followed the recipe to the T and it was perfect.  Just like regular pepperoni only so much better tasting IMO.  awesome stuff
