Newbie to Smoking

Hi everyone,
Brian in Cleveland,OH. I've had a Big Joe for about three months now and have had a mixed bag of results. Still trying to find the right balance of smoke so the food isn't overpowered by it. Tried smoking a turkey for the first time today and the brine didn't turn out so great [emoji]128577[/emoji]. Hoping to gain some good info from you pros to start making this investment worthwhile and fun!
