Hey everybody my name is Brian, I bought the Chargriller Duo after thanksgiving and the side fire box after christmas. We had some decent weather one day and i put it all together and man this is one huge grill. I am so excited to get this thing out and start smoking some meet for the family. I have never used a smoker of any kind before, I know a little about smoking and have seen it done with vertical smokers but not with horizontal smokers. I read in the directions to use logs and not chips, can I use the hickory charcoal? Or should I try to find some logs somewhere? 
 
Welcome to smf brian. I have the duo too i like it alot but it does need a little babysitting.With time you will learn how they run like i did.I use royal oak lump charcoal and wood chunks in a small cast iron chip pan.I dont use pure wood in mine,not sayin that you can't.I just found it easier this way.You will also need a remote thremo as the stock ones are not too reliable,or replace the stock ones.also there is acold spot on the non firebox end that is troublesome,you will need some type of baffle, some use the charcoal tray that comes with the duo.I you do a search here you will find some great info,plus i'm sure more members will be along to help.Good luck--les
 
I assume that lump charcoal and briquets are the same thing.
 
Welcome to SMF Brian, You could start with a hickory blended charcoal or just charcoal

that will give you some face time with your smoker and you can get the feel of how much fuel produces certain temps

Maybe start with some chicken as it is more forgiving with severe temp swings

Just read some of the post and you'll be smokin' some great food in no time.

First off Welcome Brian to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
