Good Morning Everyone,
Greetings from NJ. I've been lurking around here for a while now and would like to offer a thank you to the members of this forum for the opportunity to learn from their experiences. After years of playing around with wood chips in my old reliable Weber gas grill, I acquired the Smoke Hollow 44" propane smoker on Thursday. Naturally, after assembly and seasoning it Thursday night, I pressed it immediately into service at 6:30am yesterday morning with a 9 lb butt. I was hoping to have it for dinner last night but the 12 hour cook time I budgeted for turned into 15 for it to reach 195. The result was probably the most perfect hunk of pork I've ever made. Nice bark, perfectly tender & juicy, decent smoke flavor- could have gone a little heavier with the smoke but easily remedied in the future, and I finished it with some Great Lakes Edmond Fitzgerald bbq sauce- it was amazing. Next up will be smoking turkey for Thanksgiving. Cheers.
