Greetings from south-central PA! I have been smoking meats on my 22.5" Weber one-touch gold for the past few years and have gotten quite good at it. My chicken and pulled pork are fantastic, but maintaining constant low temperatures has put perfect ribs and brisket out of reach for me. I recently purchased the 18.5" Weber Smokey Mountain off Amazon and it's arriving this week - just in time to smoke an Easter ham!

I'm very interested in curing meats and cold smoking as well. I've already learned a lot from lurking, so I figured it was time to post something. After I break in the WSM, I'm looking to cure and smoke my own bacon and and other charcuterie. 
 
Good morning and welcome to SMF, congrats on the new smoker. Lots of members that cure and smoke bacon, so I am sure you will get plenty of help.

Baconist- looks like you found the right forum and thanks for joining the SMF Family. You'll find that you'll fit right in with that WSM-we even have a WSM user group.

We have some very knowledgeable folks here that can get you started on curing meats and charcuterie.

Out with the old, in with the new (not that I'd ever part ways with my kettle). 


I know it will run hot until properly seasoned, but I don't really intend to do anything special to get it there. I have a pork butt just about ready to go so maybe I'll throw in a bunch of bacon while that's going to get it good and greasy inside. 

BONUS! The 2014 model apparently has a new rubber thermometer port. I read that it's actually not a new model, just an update and with no difference outside on the box. People were reporting it was basically luck of the draw whether you got one with or without. 


 
Wow, I feel lucky.  My 18.5" WSM has the port and I got it at the end of 2013.  I use it every time!
