Nice! I love me some big toys but those things scare me. Maybe there's a kill switch on the lid or something... Truthfully, I was pretty blown away with my results with a double grind so emulsifying gear went farther down the list. That being said I know you do big batches and can see you benefiting from it even just chopping and mixing. From memory reading Marianski they generate a lot of heat and chipped ice is mandatory but you probably knew that already. I am big fan of buffing stuff and would go nuts on it. :emoji_laughing:

Well, after looking the machine over, the hand nut that holds the chopper blades on the shaft is stripped. It is an all aluminum piece. I will talk to my buddy that is a machinist and get his thoughts, but I'm fairly certain the hole can be oversized and have a threaded brass sleeve pressed in. Project Mortadella is on hold again.

Hey IDS, any chance you have a pic of the power takeoff end where the accessories would mount. Mine is missing what ever would be there and I've found little info about it anywhere

This model does not accept accessories. Just has what looks to be a 5/16" hole for rotor shaft lubrication.

Congratulations! I have both 14" and 18" Hobart choppers and although they don't get the use they used to when we had six kids on the farm back in New York I still use them a couple times a year.

As food for thought the blades are better off NOT being as sharp as say, a boning knife. They will stay sharp and cut better with a thicker edge as the speed that the blades turn and even crushed ice can dull fine edges quite quickly.

I sharpen mine with a very slightly convex edge sort of like a properly sharpened axe or hatchet so the edge is sharp enough to cut even small pieces cleanly but has a lot of steel right behind the cutting edge to support the edge. As a knife make your uncle should know what I mean.

I can't speak to the Scharfen but the Hobart has one blade that is beveled from both sides and one that is beveled from one side and it matters in what order they are installed. DanMcG can likely advise if the Scharfen is the same as he did a nice restoration an an 18"(?) Scharfen some years ago.

Again, congrats! A bowl chopper open new horizons in sausage making. And as Chef JJ wrote salsa, slaw etc are literally a matter of a few seconds per bowl load once the product is prepped.

I just won at an auction a hobart 8141 chopper. How do you all move it around? The thing weighs a ton. I'd like to keep it in the basement and use it in the kitchen when the time comes. Any thoughts?

Yeah, find a permanent location in the basement for it and just use it where it is. These commercial outfits are meant to stay in one place in a commercial setting.
 
I used 1 years ago to process about 300lbs of butts I smoked, 1 run through it was perfect, if it went 2 times it was sausage, great machines when quantity and quickness is needed. I don't know who they borrowed it from or what they used it for. I have a 5 finger puller I run in a drill, 2 butts get done plenty fast.

The 8141 is a heavy beast with a lot of heavy cast iron (cast steel?) parts and generally has a tinned cast iron bowl. The cataloged net weight of the machine is 178 pounds so it you won't have the option for carrying it up stairs. If you remove the cover, cutter head and bowl it makes them much more manageable but the main body of the 8141/84141 is still really heavy.

The later models used a lighter stainless steel bowl and, eventually, a cast aluminum body and weigh a LOT less.

Both of my bowl cutters (14" and 18") are the lighter later style. I keep both of mine in the basement but use them in the kitchen. With that said toting the 18" one up the stairs can be tough on my mildly arthritic knees so as we have a "walk-out" basement I'll usually back the truck up to the door and drive the 18" one around to the garage so I only need to tote it into the kitchen and set it on the island.

Please post a few pictures of the machine and especially the pins on the machine base that the cover pivots on. And add your location please.

It may take me a few days to get back to you but if you have the cast iron bowl and need some advice on where to get the bowl re-tinned, possible repair part sources , tips and tricks etc please post your questions.

Worth noting, if your machine has the accessory hub for a grinding, slicing or shredding attachment the model number would be 84141 so try that model number also in any online searches.

I have the instruction/parts manual and the spec sheet for your machine in PDF format if you need them.

Thanks! I am in Pittsburgh, PA. Definitely the 8141, no attachment. I will post some pictures shortly. I think you recommended the place in Lima Ohio to get it retinned. Did you ship it there? (It is a 4 hour drive to take it there, if I were to do that) The bowl and lid aren't in bad shape, but aren't perfect either. To retin them would be either 245 or 295 depending on size. I don't mind spending the money if it is worth the return. I only paid $95 for it, but if something should happen to me and my wife/kids want to sell it..... I was also thinking the same thing, putting the base on a dolly and wheeling it around to the kitchen.
 
Thinking about retinning the lid and bowl. Not sure it really needs it. Looks like the lid was welded at some point, but that doesn’t bother me. Maybe paint the body?
