New to the world of Smoking......

Good afternoon all.

Well my title says it all. My wonderful fiancée bought me a pellet grill/smoker for my birthday, and I couldn't be happier. Especially living in Texas, I was afraid to show my head when I fired up the gas grill to cook a rack of ribs or thick steak. I was close to turning in my man card for that one.

Anywho, a little about me. Born in WI, moved to TX 5 years ago. Love to cook, in fact I was the one who fired the grills up when it was -10 on NYE, because it was a tradition. Thank goodness it won't be that cold here. I have 2 boys, about to add 3 more to the mix in December, which will make for a full Christmas.

Those pellets sure do make it easy and can take away from of the standard newbie frustrations, good buy! To get even more familiar with the process and share the fun I recommend a wifi enabled thermometer. There are several good brands but I'm digging my Meater
