Hi everybody. My name is Kyle, I live in beautiful Hood River, OR, make beer for a living, and am new to smoking. I've been messing around with smoke on both a Weber and a gas grill to decent success. I'm very interested in doing full on smoke sessions in a rig made for smoking. I'm also very interested in curing meats (catalyst for my new hobby) so cold smoking is the 1st project. It seems that you can't purchase a proper cold smoking unit, which is fine by me I like to tinker around.

From limited research I'm looking at getting a 40" MES and then building a cold smoke generator while also purchasing an AMAZ-N-Pellet/Sawdust smoker. I'm hoping to stray away from having to purchase pellets, sawdust, chips, etc... We have a plethora of fruit trees in the area and I know people with orchards from where I hope to procure wood.

I'm excited to gain/share knowledge through the forum.
