Hello all, new guy here. Im from chilly Maine. I have been smoking for some time now with charcoal smokers and grills. I have finally made the switch to an MES 40. Great temp control, smoke control not so good. I now have the AMNPS, thanks to all the raves I have read about on this forum. Smoking pellets are hard to come buy in this neck of the woods, so I tried some chips in the AMNPS, the worked ok, and would be fine in a pinch, but yesterday I remembered seeing a pellet grill in a hardware store in a small town I used to live in about 20 miles away, so I headed over there, and sure enough, smoking pellets on the shelf!! So I am now trying my first smoke with the Trager pellets in my AMNPS doing two (first time) fatties. Hoping they come out good. I like a nice heavy smoke, I figure if I'm going to put in the time and effort, it better taste of smoke!!!
Since wifey got me the MES 40 as a b-day gift I have smoked some Carp for carp pate. I know many of you think carp sounds gross, but I have not met anyone yet who doesn't like it once they try it, and I could name off about a dozen fellas who would fight you for the last bite.
Also did a ham, still eating off that, was a big one. Did some chedar, and had to replenish my smoked salt supply, did a few kielbasa and had smoked choppers for supper last night. I'm loving this MES electric, though I have to admit, I kinda miss that little extra something the charcoal gave. It was a cheap wallyworld special cabinet style and is rusting out on the bottom. I got a few years out of it though, and for what I paid for, it I quite pleased with its performance. Prior to that, I was smoking in a cheap charcoal grill. PITA but got the job done.
I'm finding I'm quite fond of the great temp control I get now with my MES and now with the AMNPS and some pellets, I'll be doing alot of smoking again.
