Hi all! 

My name is Matthew. Located in Indianapolis. I received a Masterbuilt 30" electric smoker for Christmas from my wife and I am super excited! I have already broken it in with a meatloaf and a half a dozen sausages. All turned out very well! I have a couple questions, some of which may ruffle some old school smokers' feathers...

1. How can I find out if wood x, y or z is good for smoking? I know not to use coniferous trees, but are other hardwoods than nut and fruit okay? I recently lost half of a sweet gum tree and was thinking of giving it a whirl on something cheap, a couple of chicken quarters maybe. Is it possible that if the wood is awful it could taint my smoker? Do smokers have a memory regarding smoke? For example if I only ever used hickory in a smoker and then decided, after years of hickory, to try apple wood, would I still get hickory notes due to the buildup inside the smoker?

2. How necessary is the AMNPS with the MES 30"?

3. What is the minimum and maximum temperature to cold smoke cheeses?
