Hi Folks,  My name is Norm (aka Wayneman) and I am from Escondido, CA.  I am turning 60 and have just purchased my first smoker.  A Masterbuilt 30" electric, model 20070411, remote, meat probe, etc.  During my pre-purchase research I decided to also buy an A-Maze-N pellet smoker because cold smoking interests me.  I have seasoned the smoker(s) per instructions but have not used them yet.  First order of business was to build a stand for the MES.  Maybe the younger smokers don't mind being on the ground, made no sense to me.  I have tasted some excellent food from backyard smokers and am excited about being able to produce the same results.  BUT, I gotta say, in all the reading it gets a little over whelming as to where to start.  This web site looks like a great place for a newbie.  I can't wait to get started, I hope you are all ready for a new round of questions.  Thanks for allowing me to introduce myself.  (PS: Start up date is 10-4-12, kayak fishing in Mexico first.)
