Hey there, I am Mark. Just got in to smoking. I fit's experimented with my gas grill and some wood chips in a smoker box. Two weeks ago I bought a new charbroil american gormet offset smoker. I live in york pa with my wife and 3 kids. I tried smoking some burgers over the weekend and they came out ok, but little dry. I have been reading about some mods that will help this smoker perform better and I am going to try and seal it up this weekend and install two thermometer in the lid at grate level. Hopefully try to not ruin a pork loin on Sunday. Just wanted to drop a line and say hey. Any insight you professionals can give this rookie would be greatly appreciated
