just getting into the art of smoking meat.Have only done a few things such as pork chops and pork tenderloins. They all came out great.......... Then i tried a 7 lbs brisket flat. Felt like it wasn't as juicy as i thought it was going to be. The taste was great and all the meat got eaten. Everyone seemed very happy to consume it. Its just not what I envisioned. I'm smoking with a masterbuilt electric smoker. Basically i think i waited very patiently the whole time a freaked out at the end and pulled the meat off at about 184. gonna try again tomo and aim for a little higher IT. i smoked at about 220 and sweated bullets through the stall. i did not foil it just kinda wanted to see what it was gonna do.
