New member just joined today - Sparky nickname as I'm an electrician here in Ontario Canada.
Girlfriend got a smoker for X-Mas and just finished the burn in period today! Best present ever!
Excited to start using it and while searching the WWW stumbled across this amazing forum! So much info I could read for days!
First thing to go in is a Lake Trout that we caught earlier this week out on Lake Simcoe.
Tomorrow making some venison sausages that I'm excited to smoke to! Before I ruin the venison sausages I think I'm going to buy some butcher made pork sausages today when I'm in getting casing. Give them a go after the fish and see how they turn out!!!
So many great recipes and tips in this forum! It's awesome!!!
