Bought this two weeks ago along with the cold smoker attachment, seasoned, and have actually despite the week of rain been able to do three runs..first two were using pork sirloin...figured a cheap cut = a less expensive lesson. First smoke, turned out without much flavor. Second attempt, same cut, injected a sauce, turned out much better, good enough to take one to our neighbor. Yesterday, two racks of baby backs, used 3,2,1...but they were falling apart before the last hour, turned off heat and cold smoked the last hour. Think i should have rotated the racks half way through, as one, upper rack was better than the lower one.
First thing i did was build a cart to keep everything together, than put a 8x12 roof over that portion of deck.
Blue tarp...a week of rain prior to adding the roof!
