Been lurking for awhile so I finally took the plunge. I live in Hunterdon County NJ.  I am realtively new to smoking and have a MES 40 that I just got and have converted Weber Smokey Joe smoker.  I have been mostly smoking fish (Bluefish) that I catch.  Although since getting the MES 40 I have tried smoking cheese and short ribs.  Haven't tried the cheese yet but the ribs were decent.
