I've been following this forum for several months now and decided to make an account. I've learned most of what I know about smoking from this site. My name is Jacob and I'm from Whitehall, MI. I started smoking about a year ago. Bought a 30 inch MES electric smoker and just a few weeks ago did the mailbox mod with the Amzen pellet tray. So far I've made some jerky, sausage, and snack sticks. Good and bad. Recently I've been using sous vide to finish my sticks/sausage. Trying to figure out what works best.
