Hi! My name is Matt, and I'm from TX. I have an Oklahoma Joe's Highlander and it is probably the best gift I have ever received thanks to my wife and family.

I'm smoking a brisket as I write this. A couple of days ago I smoked the absolute best pork butt yet. I think I have the smoker dialed down to where exactly how it runs.

What is your charcoal of choice, and wood of choice? Right now I'm using Jealous Devil Chunx XL Lump Charcoal, which I think is way better than any briquettes, it burns very clean. I tried oakwood for my pork butt l, and now I'm using it for my brisket.

Welcome from Kentucky!

After I get a good coal bed going with whatever charcoal I have, I pretty much keep the heat on my highlander going with splits only. Just chuck a 2 or 3 inch split in the firebox when temps start to dip. I use mostly cherry and hickory.

I only use charcoal to get it started, by it sometimes I will add a little more if it is a very long cook. Lately my splits have been lasting about 1.5-2 hours, keeping it 230-240°F
