Hello everyone...new smoker owner here in NC.  I've done lots of grilling but new to the smoker world. 

I have recently purchased a Master Built electric 30" smoker, have seasoned the smoker, and have smoked my first meat with absolutely awful results.  Got a lot of good input from folks on the Meat Smoking facebook group and have been playing with the smoker, without meat, to learn more about smoke quantity and how to control.  Think I'm understanding the "thin, blue whisp" and ready to try again.

as i tell everyone check out the newsletter. its a recipe to use your smoke with every Thursday in your email. and its free!

find yourself a rub recipe or buy a commercial rub (i recommend butcher BBQ but Weber makes some nice ones too)

get some country style ribs (cheap at foodlion!) and coat them in a thin layer of yellow mustard. apply the rub in a foil pan and leave in the fridge overnight.

next day put them on the smoker at 250 degrees for about 4 hours or so. you can leave in the foil pan or not up to you. cook until the internal temp of the CSR's are 180 (4 hours is a baseline could be quicker or longer)

apply your favorite BBQ sauce t with a brush or mop and put back in the smoker at 225 for 20-25 minutes. (you turn it down not to burn the sugar in the sauce) 

wrap in foil and let sit for about 30 minutes, serve hot to reheat later. (if you are going to reheat you can do the sauce step then.)

as far as wood i recommend pecan or cherry chunks you can get at Walmart or home depot (dont soak)

Try this out and see if you dont make good eats!

Welcome from SC. It's really good to have you here on this great site. I'm sorry, I don't know anything about electric smokers. But there are a ton of folks here that can give you a lot of info. Go to the electric sub-site and ask away.
